Cloves are the dried, nail shaped flower buds of an evergreen tree, which are picked just prior to blossoming. When dehydrated, they turn a rust-brown color and have a strong and fruity flavor. Whole Cloves are most frequently used in meat gravies, spicy sweet syrups and pickled fruits.
