Cumin is the dried seed of a parsley-like plant called Cuminum Cyminum. Similar to the caraway seed in appearance, it has an aromatic, hot and bitter taste. Available ground; it is an essential ingredient in most Middle-Eastern recipes. Cumin makes an excellent seasoning for soups and stews, and is also widely used in meats, pickles and cheese.
